L'Échappée Belle, Étienne's first creation, embodies the essence of three great Champagne terroirs that magnify Chardonnay: the Côte des Blancs, the Grande Vallée de la Marne and the Côte de Sézanne. On the nose, springtime aromas of white flowers, fresh herbs and sweet fruit evolve towards pastry notes. The palate is mineral and exhilarating, revealing fine bubbles and fleshy body, with a long, stimulating finish. Guide Vert RVF: 90/100

Viticulture

Average age of the vineyard: 29 years. Production: 5600 bottles. Chardonnay mainly from the Côte des Blancs 1er cru, Grauves. North and north-west exposure. Planting density: 7575 vines/ha. Tillage to express the full complexity of the terroir. Grass cover. Soil: clay-limestone.

Oenology

Direct pressing of the whole harvest with splitting of the juice and deviation from self-pressing. Wine kept on fine lees for 7 months before bottling. Dosage 6gr/L.

Smoked fish and marinated sardines • Carpaccio of scallops • Sea bass with artichokes.

Artisan-winemaker, this is how Etienne Calsac presents himself, a young harvester-manipulator established in Avize on the Côte des Blancs, who has taken over the vines from his grandparents. 2.8 ha in total spread over Avize, Grauves and Bisseuil in the great valley of the Marne. The average age of the vineyard is thirty years and the estate is certified "high environmental value". Etienne Calsac attaches great importance to working the soil and produces confidential champagnes of great purity, incisive and fine. 70% of the estate's production is exported.
