The complex nose opens with hints of black fruit and cherry, a hint of roasting brings mocha aromas. The final touch is slightly candied, with hints of strawberry and blackberry. The attack is tender and fine, which develops into a full-bodied wine with notes of violets and iris. The palate is structured, with velvety and round tannins, which give this wine all the power of Burgundy and offer it a very good ageing potential. Guide Vert RVF: 98/100

Viticulture

Age of the vines: 60 years. Facing east. Soil: marl and limestone, not very thick.

Oenology

The grapes are hand-picked, sorted and 80% of the wine is made from whole grapes. During the 17 days of vatting, between 5 and 7 punchings of the cap are carried out, as well as pumping over. After pressing, the wines are settled for 2 weeks and put into barrels. 40% of the wine is aged in new barrels and 60% in barrels of 1, 2 or 3 years. After 14 months of ageing, the wines are racked into vats, rested for 3 months and bottled without filtration or fining.

Suggestions for accompaniment

Wonderful to drink when mature with a 7 o'clock leg of lamb, a pheasant on the spit or a woodcock in the oven.

Le Domaine David Duband, implanté à Chevannes, au coeur des Hautes-Côtes de Nuits, revendique 23 appellations prestigieuses, de Nuits-Saint-Georges à Gevrey-Chambertin. 17 hectares de vignes sont cultivés selon l'éthique bio exigée par le label Ecocert. Le Domaine achète également des raisins sur pieds auprès de petits viticulteurs conduisant leurs vignes dans le respect de l'environnement. Mais avant d'étudier sa production actuelle dans le détail, replongeons-nous dans ses origines et le parcours peu banal de ce véritable trublion attachant qu'est David, un homme généreux, au coeur d'or.

Lorsque David Duband a rejoint son père Pierre à la tête du domaine viticole familiale, sa famille exploitait 15 hectares de vignes à Chevannes. Tout juste sorti de la « VITI » à Beaune, il s'est lancé dans la vinification avec son premier millésime, 1991. L'occasion pour un esprit entreprenant et talentueux de tester, d'expérimenter toutes les techniques de vinification en vue d'obtenir de grands vins de Bourgogne. Sa philosophie, il l'a puisée dans le travail viticole de son père et dans les conseils avisés de son mentor, Robert Jayer, vigneron à Magny-les-Villers.
