Viticulture

This wine is made from 100% Nebbiolo grapes grown in some of the most prestigious vineyards in the Barbaresco DOCG area, including Gallina, Messoirano, Valtorta and part of Santo Stefano. The grapes are harvested from vines that are on average 30 years old.

Oenology

After being pressed, the grapes for this wine are aged in wooden vats for two years.

Bresaola on a bed of rocket - Vinaigrette of veal loin cooked with string.
