Technique

Viticulture

Clay-limestone soil. Density: 5,000 to 6,000 vines/ha. Yield: 8 to 10 bunches per vine. Organic conversion in progress.

Oenology

Skin maceration at low temperature (10 to 15°C). Pneumatic pressing and fermentation in stainless steel vats at a low temperature of between 15 and 18°C. Matured in stainless steel vats.

Aperitif • Marinated mussels • Oysters • Zucchini rolls with fresh goat’s cheese.
