Viticulture
Rèze is one of the oldest Valaisan grape varieties: it is mentioned in the famous document of the Registre d'Anniviers in 1313. But this variety almost disappeared because it was replaced in the middle of the 19th century by the Chasselas, which is easier to grow and more productive. Currently, there are less than 3 hectares of it left in the whole canton. The vineyard from which this wine is made is located at an altitude of more than 700 m, in Grugnay. Its soil is made up of scree and other dejections from the top of the famous Chamoson cone. It is cultivated with care, using integrated production (partial grassing).
Oenology
The harvest took place on 23 September and the grapes reached 84°Oe. The grapes are pressed manually in a vertical press to produce a must which is then transferred to a 5th passage barrel and two 3rd passage barrels for fermentation. Alcoholic fermentation is triggered by a vatful of indigenous yeasts, and malolactic fermentation takes place naturally the following spring. Maturing continues for a few more weeks. The wine was then bottled on 17 August 2023 without filtration.
