Viticulture
The metaPHUSIS range is made from grapes or wines purchased from respectful winegrowers whose work and plots are known to us. This cuvée comes from a beautiful plot in La Neuveville, on the shores of Lake Bienne. The locality is called Les Perrières. Riesling was planted here around twenty years ago from two selections: one from Alsace and one from Germany (Bernkastel). Extensive vine-growing is practised here and the vines are trained in free-standing vines.
Oenology
The grapes are pressed in a hand-operated vertical press and the must is then settled before being placed in a new ‘feuillette’ and a ‘feuillette de 6ème vin’ for fermentation. During the summer, the two containers are blended and stabilised without malolactic fermentation, and the maturing process continues for a few more weeks. The wine is bottled without filtration.
