Viticulture
This wine comes from the western part of Dézaley, in a place called Les Dix-Sept. Made up of numerous terraces overlooking Lake Geneva, this parcel is cultivated biodynamically.
Oenology
The grapes are pressed in the traditional way, in a vertical press, and after a light settling, the juice is fermented in an oak barrel that has already contained 7 wines. Malolactic fermentation follows the alcoholic fermentation, and the wine continues to mature until mid-summer. The wine is bottled after light filtration, by gravity.
Suggestions for accompaniment
Aperitif, pike fillet with beurre blanc, old mountain cheeses.
