This Chasselas comes from a terraced plot in the Plan-Cerisier region of Martigny, in the place known as Les Bans. These old, steeply sloping vines are rooted in a predominantly granitic soil.
The harvest takes place on 14 October with a sounding of 82°Oe. The juice is pressed in a traditional way, on a vertical press, and fermented in stainless steel tanks with indigenous yeasts. Malolactic fermentation takes place the following spring. The wine is bottled by gravity, without filtration, on July 16, 2020.
