VdP, Arvine sur falaise, Phusis - S. Bettschen - 2020

Clear, pale yellow colour. Initial nose of green apple, followed by marzipan, coriander, light boxwood, melon and berries in alcohol. On the palate, the wine is substantial, dense and very salty, developing into a winey, full-bodied wine with intense substance and a fine acidity that carries through to the finish. A full-bodied wine, more suited to the table than as an aperitif.

Viticulture

Adjacent to the old Sensine vineyard is an Arvine planted in 1997. The first two vintages of this vigorous parcel produced a dry and then a semi-sweet wine. From 2009 to 2013 inclusive, the grapes participated in the méthode champenoise. And after seven years of careful viticulture aimed at reducing the vigour, this vineyard is once again producing a dry wine. Also in the same plot, the 2013 plantation, from a selection of wood taken from the old vineyard, is now in production.

Oenology

The harvest takes place in two stages: on 16 September for the 2013 plantation (94°Oe) and on 30 September for the 1997 vineyard (101°Oe). Both harvests are pressed by hand (vertical press). With little settling, the musts ferment separately in a 2nd passage barrel, a 6th passage barrel, a new feuillette and a 2nd passage feuillette. Alcoholic fermentation is completed the following summer (malolactic fermentation takes place in the meantime) and the wine continues to mature for a second winter in wood. The different barrels were put into mass in March 2022. The wine was lightly filtered before being bottled on 4 July 2022.

Suggestions for accompaniment

Terrine of fish and preserved vegetables, courgettes stuffed with fresh goat's cheese, ham with parsley.
