Viticulture
A family estate now in its fifth generation, located on the Côteaux du Cher, with south-facing plots. Vincent cultivates a total of 12.7 hectares of Sauvignon Blanc. He regularly works the soil and uses grass cover. The Petiot cuvée comes from young vines aged 20 to 30 years.
Oenology
Sorting of the juice during pressing. Slow fermentation at low temperature for 3 weeks, then aged for 6 months on fine lees in stainless steel tanks (4/5) and 3-wine barrels (1/5).

Aperitif • Oysters au gratin • Papardelle with courgette flowers.
