The resulting wine was one of our favourites at this year's Vinitaly show in Verona. It offers a magnificent nose of red and black fruit, fine pepper and violets, followed by a crisp, sapid, fruity palate that charms with its smoothness, balance and dynamism. A priority discovery!

Viticulture

Cuvée from the Les Toules vineyard, on morainic and sandy soil, on a steep slope. Altitude 650m, south-west exposure, density of 7500 vines per hectare, with Guyot pruning.

Oenology

Vinification in temperature-controlled vats. Alcoholic fermentation for 8 days, followed by 8 to 9 months in vats and 5 months in bottles.

Suggestions for accompaniment

Brasato and polenta with Alpine Fontine - Veal shank "gremolata - Cannelloni with oxtail and truffles.

Domain
The Domaine des Crêtes was founded in 1989 in Aymavilles by the charismatic Costantino Charrère, who is in a way the "father" of all the great Valle d'Aostan winegrowers. It is now run by his daughters, who represent the fifth generation of this family, which has always been involved in agricultural production in the most poly-cultural sense of the word. The vineyard covers 25 hectares along the Dora Baltea, which crosses the region like the Rhone in Valais, in the communes of St-Pierre, Aymavilles, Gressan, Sarre, Aosta and St-Christophe. It is unanimously the most (re-)known Valle d'Aostan domain in the world and we import it exclusively for Switzerland.
