Without hesitation, this parcel-based cuvée from the Mélaric tandem can claim to be one of the quintet of the best Loire Cabernet wines of the vintage. The wine is deep (spices, chilli) and sappy on the palate, with a vinosity that makes it well-suited to long ageing, in the same style as the wines of Bernard Baudry, Aymeric Hilaire's mentor. Viticulture

The Clos de la Cerisaie vines cover around 1.3 hectares of Cabernet Franc and 70 ares of Chenin. This is the estate's main cuvée. The vines are on average 45 years old. They are located at the bottom of the Cerisaie hillside, facing east. The bedrock dates from the Middle Turonian period. It is a formation of micaceous chalk, characterised by a fairly fine-grained white tufa. The soils are shallow and composed of a mixture of chalk and clay.

Oenology

The red wine is matured for twenty months in wood and then four to six months in vats.

Grilled tuna steak - Veal quasi, chard gratin - Baked peppers.
