Viticulture
The Clos de la Cerisaie vines cover around 1.3 hectares of Cabernet Franc and 70 ares of Chenin. This is the estate's main cuvée. The vines are on average 45 years old. They are located at the bottom of the Cerisaie hillside, facing east. The bedrock dates from the Middle Turonian period. It is a formation of micaceous chalk, characterised by a fairly fine-grained white tufa. The soils are shallow and composed of a mixture of chalk and clay.
Oenology
The red wine is matured for twenty months in wood and then four to six months in vats.
