Viticulture
Produced on 0.7 ha, from two small plots located on the limestone hillock of Berrie, at the southernmost point of the Saumur appellation. The two plots are on a moderately steep west-facing slope. The white clay soil is very shallow (30 cm) and lies on the upper Turonian limestone bedrock.
Oenology
The grapes are harvested in small crates. Slow fermentation (using indigenous yeasts) is completed in late spring following the harvest and takes place in 400-litre Vicard tanks (4 wines). The wine is aged on its lees, but no batonnage is carried out. The aim is to conserve the CO2 present in large quantities so that little sulphite is added before bottling.
