Technique
Viticulture
The estate's oldest vineyard, La Solana, was planted in 1911. Biodynamic viticulture. Very low-yielding vines. North-east facing with a constant breeze. Early ripening. Altitude: 370m. Laminated "Licorella" blue slate soils. Density: 5,500 vines/ha.
Oenology
Harvested by hand and selected grape by grape. Harvested in one day in mid-September. Maceration without destemming, in oak barrels for 40 days, aged for 18 months in a large barrel.
Suggestions for accompaniment
Thai-style stir-fried meat - Roast pigeon - Oxtail cannelloni.
