Technique

Viticulture

Vines located in Corin at Lieu dit Bretton and in Miège. Produced from an average yield of 450 g per vine (i.e. per m2).

Oenology

Cold maceration for 8-10 days and vatting for ten days with 10% of stalks. Aged in fine-grained stave casks from central France, 80% of which are new, for 12 months. Little So2 due to the cold cellar ageing and in order to respect the nature of the fruit and to reduce the wood intake. Bottled after 14 months without fining, with very light filtration and following the lunar calendar to respect the qualities of the wine.

Suggestions for accompaniment

Tajine of pigeon, cherry and pistachios - Quasi of veal and gratin of chard - Roasted farmhouse poultry.
