Plots located in Miège and Corin. From an average yield of 500 grams/per vine (i.e. per m2).
Oenology
Cold maceration for 8-10 days and vatting for ten days. Aged in fine-grained stave casks from the Centre of France, 40-50% of which are new casks, for 12 months. Little So2 due to the cold cellar ageing and in order to respect the nature of the fruit. Bottling after 15-18 months without fining, with very light filtration and following the lunar calendar in order to respect the organoleptic qualities of the wine.
Suggestions for accompaniment
Rack of lamb with herbs - Venison - Veal liver with raspberry vinegar, blackcurrant berries.
