The nose of this Pinot Gris Vendanges Tardives from granite terroir is intensely smoky, with aromas of baked apples, pears, white truffles and honey. The attack is dense and rich, then lively and penetrating, with harmonious acidity, leading to a long, suave, saline and salivating finish. A tightrope walker's balance!

The wine is made from very ripe grapes. But on this relatively cool and late terroir, the pinot gris retains a very good acidity. Although the vines are quite young (about 15 years old), they produce a particularly well-balanced grape here, capable of giving the wine tension, freshness and great aromatic finesse.

Alcoholic fermentation is generally carried out with indigenous yeasts and malolactic fermentation is not sought. The pressings on whole grapes are slow and the settling that follows is not very thorough. The wine is fermented in large tuns.

Suggestions for accompaniment

Pan-fried or terrine foie gras, scampi or lobster salad with citrus vinaigrette, Asian cuisine with ginger, duck with orange.

The estate has been growing organically - without a label - since 2003; the plots have never been fertilised or treated with nitrogen. The grapes come from massal and clonal selections, depending on the terroir and age. They are sorted at the plot and at vatting. Alcoholic fermentation is carried out using indigenous yeasts and malolactic fermentation is not sought. The pressings on whole grapes are slow and the subsequent settling is not very thorough. The wine is fermented in large oak barrels of several wines. Total sulphur levels are low for the region (80 mg/l) and only 20...
