Viticulture
The spearhead of the estate. The terroir known as "de gravette" is made up of limestone fragments from the Upper Jurassic era bound by red clay. Located in the north of the appellation, it is one of the highest quality soils in the Pic St Loup, and is conducive to the production of wines with a natural fruitiness. We are here on old vines harvested manually. The grapes are destemmed and sorted. Conversion to organic farming is in progress.
Oenology
Traditional vinification without sulphur: 22 to 28 days with temperature control. Aged for 14 months in barrels.

Grilled entrecote - Baked rib of beef - Rack of lamb with herbs - Roast cabbage.
