This cuvée is the latest addition to the estate. The terroir is made up of limestone fragments from the Upper Jurassic era bound by red clay. We are here on old vines with low yields, harvested by hand. The grapes are then destemmed and sorted. Conversion to organic farming is in progress.
Traditional vinification without sulphur: 22 to 28 days with temperature control. Aged for 14 months in barrels.
