Pic Saint-Loup, Cuvée Soulane, Dit de l'Hortus (magnum) - 2016

This cuvée comes from a parcel: La Soulane, one of the most beautiful terroirs of the property. It is south-facing, in the middle of the slope, under the cliffs of the Hortus. The soil is made up of limestone scree and is both draining and deep. The vine, although in one of the hottest climates in the valley, does not suffer from the summer drought. This results in a beautiful maturity combining power and an excellent balance between the quality of the tannins, acidity and aromas.

Technique

Viticulture

Mid-slope plot with southern exposure. Brown soil forms on scree of Cretaceous limestone fragments. Slopes ranging from 20% to an altitude of 250 metres. Yield: 30 hl/ha.

Oenology

Destemmed and crushed harvest. A vatting period of 25 to 30 days. Fermentation temperature below 24°C. Aged for 12 months in vats (without any wood) and 12 months in bottles.

Suggestions for accompaniment

Grilled tuna steak with oriental sauce - Tajine of pork with prunes - Spit-roasted game birds.
