This wine has a luxuriant nose of wisteria, lilies and citrus fruits, enhanced by a subtle breeding; it is chiselled, straight, nervous, with a striking freshness for a southern wine, even evoking some of the best signatures of Burgundy. A very fine wine for gastronomy, which should be served with a meal rather than as an aperitif!

Viticulture

Altitude 120 m. Brown soil formed on coarse Quaternary alluvium or on marl-limestone parent rock or on scree of limestone fragments under a cliff. 40 hl/ha for the Chardonnay and 25 hl/ha for the Viognier. This wine comes exclusively from the old vines of the Hortus.

Oenology

Direct pressing, cold settling. Fermentation and maturation in new barrels for 8 months.

Suggestions for accompaniment

Chicken in lemon jelly - Cod brandade - Grilled pike-perch back with fennel.
