Viticulture
Fabbrica Pienza was founded in 2013 with the aim of creating wines with a distinctive organic identity. Pienza's climate is very similar to that of the Rhône Valley, warm and temperate. Rainfall is high throughout the year. The hilly terrain is reminiscent of the southern Rhône Valley, while the soils are more similar to the Crozes-Hermitage region. The soils are sandy-clay with a high cation exchange capacity, a good supply of active limestone, a high mineral salt content and numerous Pliocene and Quaternary marine deposits.
Oenology
15% of the grapes were left as whole bunches. The whole bunches were placed in vats and crushed before the destemmed grapes were vatted on top. Fermentation took place using indigenous yeasts. The vats were first pumped over twice a day and, when the cap had softened sufficiently, they were then pigmented. Fermentation and maceration lasted around 90 days before the wine was pressed and immediately racked into an uncoated cement vat and aged for around 12 months.
