Fabbrica Pienza was founded in 2013 with the aim of creating wines with a distinctive identity in the heart of the Val d'Orcia, an area of great beauty. The Newton white blends vermentino and viognier, two varieties that, on paper, seem diametrically opposed: vermentino is austere, crisp and saline; viognier fragrant, full and exuberant. Yet together, in equal parts, we wonder how they could have been separated!

Viticulture

Fabbrica Pienza was founded in 2013 with the aim of creating wines with a distinctive organic identity. Pienza's climate is very similar to that of the Rhône Valley, warm and temperate. Rainfall is high throughout the year. The hilly terrain is reminiscent of the southern Rhône Valley, while the soils are more similar to the Crozes-Hermitage region. The soils are sandy-clay with a high cation exchange capacity, a good supply of active limestone, a high mineral salt content and numerous Pliocene and Quaternary marine deposits.

Oenology

The selected grapes were destemmed and pressed, and the juice clarified for 48 hours at 10°C before being racked into 20 hl Grenier truncated wooden vats and left to ferment with natural yeasts. At the end of fermentation, the wine was racked to fill a vat with each grape variety and a blend of the two grape varieties was racked into an uncoated concrete vat. The different parts were then left for 11 months on their lees before being blended in stainless steel tanks for 6 months before bottling.
