Viticulture
Sandstone and schist testify to the diversity offered by the Terrasses du Larzac, and in particular for this cuvée, the commune of Saint Privat. Traditional cultivation without weedkillers or synthetic molecules, disbudding, short pruning, manual harvesting.
Oenology
Sorting in the vineyard and in the cellar, partial destemming, vatting for 15 to 20 days, temperature control. Aged 20% in demi-muids.
Suggestions for accompaniment
Wheat risotto with spring vegetables • Meatballs in tomato sauce.
Les Vignes Oubliées is no longer a well-kept secret: this intimate Languedoc estate has, in just a few vintages, become a must-visit destination for lovers of deep, lively, and authentic wines. The soils—a patchwork of clay, sandstone, and schist—produce remarkably nuanced wines here, shaped by organic farming practices that come naturally to the estate. Everything is designed to let the terroir express itself unadorned: low yields, gentle winemaking, a pursuit of balance, and meticulous care at every stage. But the estate’s true hallmark is its cave-like cellar, carved directly into the rock. A discreet estate, yet one that speaks for itself. For discerning explorers and those seeking an emotional experience, Les Vignes Oubliées is well worth the detour.
