Viticulture
Franck Lijour, a farmer and winegrower, took over the family estate in 2014. Sunny plots with south-west and south-facing aspects. Gros Manseng and Petit Manseng grown on clay-siliceous and clay-limestone soils. Hand-picked and sorted from mid-October to November. The Gros Manseng grapes are harvested fairly early to preserve their freshness. The Petit Manseng grapes are picked when overripe to impart aromatic complexity.
Oenology
Very slow pressing of whole bunches. Light settling. Indigenous yeasts, with ageing on fine lees for 1 year in vats and 20% in various wooden containers.
