Viticulture
A more acidic variety than traditional Catarratto. It owes its name to the shiny appearance of the grape's surface and is characterised by a more pronounced acidity than the more common Catarratto.
Oenology
After being harvested by hand, the grapes undergo maceration at low temperatures. The free-run juice, extracted by gentle pressing, then ferments at a controlled temperature of between 18 and 20°C. The wine is then aged for four months on fine lees in stainless steel vats, before being refined in the bottle to perfect its balance and texture.
