Mas de Daumas Gassac is located in the middle of the Arboussas massif, on deep, perfectly drained soil that is poor in humus and plant matter and rich in mineral oxides. This terroir was formed during the accumulation of glacial gravel by the wind during the Riss, Mindel and Guntz glaciations.
Oenology
Skin maceration at 10°C for 5 to 7 days, fermentation in stainless steel vats at between 20 and 25°C for 3 weeks. Maturation in vats.
Suggestions for accompaniment
Poularde with morel mushrooms - Sea bream with olives - Cheese.
