Viticulture
Terroir of Villeveyrac. Chalky slopes dating from the Jurassic period at an altitude of between 150 and 300 metres for the Syrah; chalky sandstone slopes and Rognacian marl for the Merlot. Yield: 45 to 50 hl/ha.
Oenology
Medoc-style vinification, 100% destemming. Slow maceration (15 to 20 days), temperature 28 to 33°C. Partial ageing in barrels for 8 to 9 months, in barrels of 1 to 3 wines.
Suggestions for accompaniment
Moussaka • Chicken kebabs in satay sauce • Lamb couscous.
