Viticulture
The vineyard covers around 15 hectares of terraces surrounded by dry stone walls called ‘clapas’, nestled at an altitude of 350 metres at the foot of the Larzac plateau. On limestone scree soils that ensure good water drainage, the vines are cultivated as naturally as possible without the use of chemicals. The soil is worked thoroughly. ‘Les 5 Seaux’ is a tribute to the Cinsault grape variety that made the Languedoc region famous. Five buckets per vine.
Oenology
Total destemming. Fermentation for 15 days. Maturation in 500-litre barrels.
Suggestions for accompaniment
Shoulder of lamb with olives and preserved lemons • Pissaladière • Tian of vegetables with chorizo.
