A classic southern wine that combines character, refinement and energy. The nose is deep and complex: black cherry, plum, fine leather, garrigue, Sichuan pepper and a touch of graphite. On the palate, the balance is superb: silky texture, perfectly ripe fruit, assertive but integrated structure. The tannins are elegant, supported by remarkable freshness for this vintage. The finish is persistent and racy, with notes of black fruit, cocoa and dried herbs. A wine that combines the strength of the Alpilles terroir with a style of great distinction.

Technique

Viticulture

The vineyard consists of 20 plots nestled in the scrubland and forest, planted between 1973 and 1978. Exposure varies but is mainly north-facing. Very stony soils with sand and gravel, limestone bedrock outcropping in places. Altitude between 80 and 280 metres. The vines are ploughed.

Oenology

The grapes are not destemmed. Low yield (25 to 30 hl/ha). No yeast added. No temperature control (it can rise to 36°C). 5-7 days of fermentation and approximately 15 days of vatting. Maturation in 30 hl casks for 18 months.
