Technique
Viticulture
The vineyard consists of 20 plots nestled in the scrubland and forest, planted between 1973 and 1978. Exposure varies but is mainly north-facing. Very stony soils with sand and gravel, limestone bedrock outcropping in places. Altitude between 80 and 280 metres. The vines are ploughed.
Oenology
The grapes are not destemmed. Low yield (25 to 30 hl/ha). No yeast added. No temperature control (it can rise to 36°C). 5-7 days of fermentation and approximately 15 days of vatting. Maturation in 30 hl casks for 18 months.
Suggestions for accompaniment
Grilled veal chop, rosemary jus - Oven-roasted aubergines, Parmesan cheese and Provençal herbs - 24-month-old Comté cheese.
