Viticulture
The wine is issued from vines planted in the coolest plots of the domaine (north-facing, directly on th edge of the forest, with deep loam-loess soils).
Oenology
Slowly fermented in large format wooden barrels over the course of a year. Bottled unfiltered and without sulfur but with plenty of fine lees and a touch of finely integrated, natural carbon dioxide! The fine lees keep the wine fresh and reductive; after decanting, it opens up very pleasantly and generously.
Suggestions for accompaniment
Thin tart with caramelised onions and old Gruyère cheese - Roast cod, lemon butter & fresh herbs - Tonkatsu (Japanese breaded pork) & ginger sesame sauce.
