Viticulture
Situated to the north-west of the Dentelles de Montmirail, the vines are planted at altitudes of between 100 and 300 metres, giving the wines freshness and complexity. The vines are between 70 and 90 years old.
Oenology
The wine is aged for 24 months in oak casks.

The Stehelin family comes from a line of five generations of winegrowers. Nicole and Frédéric have run the Paillère and Pied-Gû estates since 1978. Bertrand, their eldest son, has worked alongside them since 2001, developing his own label at the same time, but from the same land. Both estates are located in Gigondas and have vines on some of the best terroirs in the village - as the neighbouring winemakers themselves say! We'll be receiving their excellent Gigondas in the autumn, but in the meantime, it's the Sablet finage that's in the spotlight. For many, the wines will be a revelation! They're the best we've tasted from the AOP, including the white.
