On the colourful marls and clays of the last part of the south-western slope, and the sandy clays above, Gewurztraminer's hardy, early-ripening nature is tempered by the coolness of the area, both in terms of the soil, which retains rainwater well, and the climate, which only warms up late in the day. These conditions are conducive to slower ripening, which favours excellent phenolic ripeness, essential for any great terroir wine, and even allows noble rot to develop in suitable vintages.
Oenology
When conditions permit, the estate harvests the Gewurztraminer grapes from the Fronholz area that have suffered from passerillage or noble rot, to produce a Vendange Tardive, a great sweet wine that is as unpretentious and unpretentious as it has always been.
