Côtes du Jura, Cuvée du Professeur, F. Rousset-Martin - 2022

An iconic expression of François Rousset-Martin’s work, this Savagnin is made from grapes grown on the marl soils of the Château-Chalon region and patiently matured in Burgundy oak barrels. The ‘ouillé’ ageing process lends the wine a taut and precise character, whilst retaining a deeper dimension, marked by slightly caramelised notes and a subtly golden richness. On the palate, it combines energy and fullness, with a creamy texture underpinned by a lovely umami presence. A wine of character, with a unique balance, which is particularly at home with food.
