Viticulture
3 hectares. Vineyard planted in 1960, facing east, on the Beaune mountain. Clay-limestone soil, very stony. Yield: 35-40hl/hectares. Certified organic cultivation.
Oenology
Manual harvesting always late, grapes sorted, destemmed but not crushed. Vatting by gravity, indigenous yeasts, pre-fermentation maceration, moderate punching down (4 to 5). Pneumatic pressing. Blending of press juice and free-run juice. Aged in vats and barrels for 2 to 3 wines on lees. Bottling after the second winter, without filtration.
