Viticulture
The estate's Charlemagne is located mainly in the commune of Pernand, and comes from the climates "Le Charlemagne" and "En Charlemagne". The vines are 50, 20, 10 and 3 years old. This south-west facing grand cru is planted on silico-calcareous marl, with a fairly steep slope. The shallow soils, made up of friable rock, are fairly light, poor and very stony.
Oenology
Pressing is done with a pneumatic press and lasts two hours. After 24 hours of settling at low temperatures, the juice is placed in barrels for fermentation. The proportion of new wood is 30%. The wine is bottled after 12 months of ageing.

Foie gras - Lobster - Lobster - Delicate fish - Calf sweetbreads in cassolette - Chicken supreme with morels - Brillat-Savarin.
