Produced by a sensitive winemaker with a rare talent (she made wine for many great estates before setting up her own business), this vintage of old vines is a bit like the wine for special occasions, the one you bring out on special days, as its name suggests. It is distinguished by its spicy and deep side, characteristic of the great Corbières. A talkative wine from the start, but capable of ageing well!

Viticulture

Lower Paleocene subsoil. Gravelly clay-limestone soils. Terraced vineyards. Altitude between 200 and 225 m. North-western exposure. Terroir of Lagrasse. The vines are cultivated without the use of insecticides or weed killers, in organic agriculture certified by Ecocert. Carignan 70 years old, Syrah 25 and 10 years old.

Oenology

Manual harvesting, the grapes are de-stemmed and crushed. Vatting time of 20 to 25 days. 2 manual punchings of the cap per day until total immersion of the marc. Aged in vats at 100%. This is the first year that this cuvée has been aged solely in vats. The search for aromatic complexity and fine tannins is the reason for this choice.
