Viticulture
Lower Paleocene subsoil. Gravelly clay-limestone soils. Terraced vineyards. Altitude between 200 and 225 m. North-western exposure. Terroir of Lagrasse. The vines are cultivated without the use of insecticides or weed killers, in organic agriculture certified by Ecocert. Carignan 40 to 70 years old, Syrah 25 years old, Grenache 27 years old, Mourvèdre 9 years old.
Oenology
Manual harvesting, the grapes are de-stemmed and crushed. Vatting time of 20 days. 2 manual punchings of the cap each day, until total immersion of the marc. Blending of grape varieties during vatting. The estate uses a vacuum press which allows for very gentle pressing. The "Lolo de l'Anhel" therefore contains all of these press wines, supplemented by a vat of Carignan. Aged in vats at 100%.
