Viticulture
Lower Paleocene subsoil. Clayey-limestone soils. Terraced vineyards. Altitude between 185 and 200 m. Southeast exposure. Terroir of Lagrasse. The vines are cultivated without the use of insecticides or weed killers, using Ecocert certified organic farming methods. Carignan centenaire and 69, 61,48, 40 years old, Grenache 30, 9 and 6 years old, Syrah 28 and 10 years old, Mourvèdre 9 years old.
Oenology
Manual harvest, the grapes are de-stemmed and crushed. Vatting period of 28-30 days. 1 manual punching of the cap each day, until total immersion of the marc cap. Partial blending of the grape varieties during vatting. Aged 100% in vats.
