Viticulture
From a single plot planted with vines, old vines at altitude (300m), facing south-east, protected from the setting sun. Planted in 1936.
Oenology
Harvested by hand. Direct pressing, fermentation in barrels, aged for 8 months on lees, stirring of the lees every day during fermentation, then once a week until December. Bottled in spring.
Suggestions for accompaniment
Rock fish soup - Artichoke, fennel and grilled red mullet salad - Cream of chickpea soup with prawns.
