Viticulture
Situated on the extension of the first hillside that follows on from the Pavie hillside, Clos Puy Arnaud is set on a clay-limestone terroir overlying asterian limestone and Castillon limestone. The entire vineyard is managed using organic methods to enhance the estate’s vitality. Yields are around 30 hl/ha, with a planting density ranging from 5,000 to 6,600 vines per hectare.
Oenology
The grapes are harvested by hand and sorted in the cellar. Vinification takes place in wooden vats (75 per cent) and cement vats (25 per cent), with fermentation carried out using natural yeasts. Malolactic fermentation and ageing take place in barriques with a single racking (60 per cent new oak).
