Technique

Viticulture

The vineyard is situated in the commune of Saint-Christoly-de-Médoc, overlooking the Gironde estuary, and in the commune of Couquèques, with 10,000 vines per hectare. Soils: 30% clay-gravel, 27% Couquèques limestone, 25% sand, 13% clay-sand, 5% gravelly sand. Average age of vines: approximately 40 years. Yield of approximately 1 kg of grapes per vine (6 to 8 bunches per vine).

Oenology

Hand-harvested into small crates. The grapes undergo a double sorting process before and after gravity destemming on vibrating tables, followed by transfer to vats using a peristaltic pump (cold pre-fermentation at 8° to 10°C for 48 to 72 hours). Traditional vinification involves pumping over in concrete vats and punching down in wooden and concrete vats (in part). Pressing using a vertical press. Malolactic fermentation via co-inoculation during alcoholic fermentation. Ageing on lees with stirring in new barrels. Ageing separated by grape variety and type of container (21% new barrels for 17 months, 20% one-wine barrels for 17 months, 10% 500-litre barrels for 12 months followed by 5 months in concrete vats, 43% in concrete containers for 12 months followed by 5 months in concrete vats, 6% in 8-hectolitre terracotta jars for 6 to 8 months, followed by 9 to 11 months in concrete vats.)
