Viticulture
The vineyard is located in the commune of Saint-Christoly de Médoc, overlooking the Gironde estuary, and in the commune of Couquèques 10,000 vines/ha. Soil 65% clay-limestone, 25% gravel, 10% gravelly sand. Clos Manou Cuvée 1850 is a confidential wine produced from a parcel of Merlot vines that date back to 1850 and withstood the ravages of this parasite in 19th-century wine-growing Europe. Around 600 bottles are produced.
Oenology
Hand-picked in crates. The bunches are first sorted on a table before being manually destemmed on oak racks. The grapes are then sorted a second time before being crushed in a manual mill. Cold pre-fermentation. Bleeding and manual punching of the cap. Vatting for 30 days. Pressing using a vertical press. Malolactic fermentation in new barrels. Aged in an air-conditioned cellar in new French oak barrels for 15 to 17 months.
