Technique
Viticulture
Small family vineyard of 9 ha located 80 km south of Siena. The soil is sandy-clay and medium sub-alkaline limestone.
Oenology
Vinification in stainless steel vats of 40 and 60 hl, temperature controlled. Aged for 10 to 12 months in 20 hl Slovenian tuns, Allier oak demi-muids and 3rd passage barrels. Refinement in bottles for 3 to 6 months before being sold.

Oven-roasted capretto with rosemary potatoes - Braised veal shank.
