Vin Santo, Giacomo Mori (37.5 cl) - 2016

Giacomo Mori's Vin Santo is made from selected white grapes harvested and left to dry for 5 months. The resulting must is aged in 50 l. oak barrels in the attic, where it is subjected to extreme temperatures for six years. The resulting vin saint is a great oxidative liquoreux with notes of cigar, candied fruit and infinite richness on the palate.

Viticulture

Vinsanto is produced from selected white grapes left to settle for 5 months.

Oenology

The must from the pressing is aged in 50-litre oak barrels in the Vinsantaia, located in an attic, where it is subjected to the most extreme temperatures. After six years of ageing and a slight clarification, a wine that can be defined as a concentrate of aromas is bottled.
