Vinsanto is produced from selected white grapes left to settle for 5 months.
Oenology
The must from the pressing is aged in 50-litre oak barrels in the Vinsantaia, located in an attic, where it is subjected to the most extreme temperatures. After six years of ageing and a slight clarification, a wine that can be defined as a concentrate of aromas is bottled.
