Viticulture
Created between the two world wars, the Vieux Donjon estate, owned by the Michel family, cultivates its vines using sustainable farming methods. In Châteauneuf-du-Pape, it covers 10 hectares on a plateau of rounded pebbles offering a commanding view of the town, while an additional 5 hectares are spread over sandy soils to the south of the village, bringing diversity and richness to the terroir.
Oenology
The winemakers produce their wines using traditional winemaking methods, without the use of new wood. The grapes are destemmed before undergoing long fermentation, then aged in casks.

Rack of pork with candied vegetables - Medallions of venison with pepper sauce - Lamb Crépinette with cumin and apricots.
