Chassagne-Montrachet, Le Concis du Champs, Hubert Lamy - 2021

More lemon than lime in colour, with a much riper bouquet, including some yellow fruit. This is more in the juicy style rather than chiselled with nonetheless a fine acidity behind. Slightly saline, the Concis des Champs certainly makes one salivate. Fine persistence, I like this more this year than sometimes in the past. In fact, this may be Olivier’s best Concis des Champs in bottle to date. 91/100. - Jasper Morris MW.

Viticulture

This plot, located in Chassagne-Montrachet, was planted in 2005 by Olivier Lamy – head of the Hubert Lamy estate – covering 0.93 hectares.

Oenology

Organically grown (non-certified), the high-density vineyards (to better concentrate the grapes) are vinified separately using indigenous yeasts in 600-litre barrels (very little new wood is used, which is one of the estate's guiding principles).

Seared scallops, brown butter and vanilla parsnip purée - Roasted Bresse chicken, full-bodied jus & celeriac mousseline with candied lemon - Saffron and Parmesan risotto
