Produced in 3,500 bottles, the cuvée Les Rocheforts by the young and talented Etienne Calsac is the fruit of a plot selection of Chardonnay on the Bisseuil terroir (classified as Premier Cru). Viticulture

Average age of the vineyard: 29 years. Production: 3500 bottles. Cuvée parcellaire, Les Rocheforts terroir de Bisseuil 1cru. Planting density: 7,575 vines/ha. Working the soil to express the full complexity of the terroir. Chalky soil, outcropping chalk, south and south-east facing.

Oenology

Direct pressing of the whole harvest with splitting of the juice and deviation from self-pressing. Wine kept on fine lees for 7 months before bottling. 15% of the wine was vinified and aged in barrels of several wines. Dosage 3gr/L. Minimum 3 months of ageing before delivery.

Puff pastry of turbot with sorrel - Crayfish salad - Half-dried goat cheese.

Artisan-winemaker, this is how Etienne Calsac presents himself, a young harvester-manipulator established in Avize on the Côte des Blancs, who has taken over the vines from his grandparents. 2.8 ha in total spread over Avize, Grauves and Bisseuil in the great valley of the Marne. The average age of the vineyard is thirty years and the estate is certified "high environmental value". Etienne Calsac attaches great importance to working the soil and produces confidential champagnes of great purity, incisive and fine. 70% of the estate's production is exported.
