Viticulture
Fourchaume is located on the right bank of the Serein and covers nearly 130 hectares, a large area. This can be explained by the fact that it is a "porte-drapeau" appellation, meaning that its neighbouring Climats can also claim the name Fourchaume. The parcel is oriented West/South-West with soils mainly composed of brown clay, not very stony, deep and draining.
Oenology
The harvest is entirely manual. After a light settling, the musts are put into barrels, mainly of 600 litres and also of 228 litres, where the alcoholic and malolactic fermentation takes place. The estate uses about 5 to 20% new barrels with wood coming mainly from the Allier region, in long and light toasting. The first racking takes place after about a year of maturing in wood, and then the second phase begins in stainless steel tanks, in order to keep the wine fresh and tense.
