Technique
Viticulture
Situated on the clay-limestone plateaux of the appellation, the vineyard is carefully monitored every year. The vines are on average 35 years old. The vines are grassed over every other row, ploughed traditionally and alternately, and no chemical weedkillers are used. Treatments are positioned and dosed according to disease pressure and the vegetative stage.
Oenology
Vinified by plot, extracted by pumping over and racking. Aged for eight months in stainless steel vats, racking as required.
Suggestions for accompaniment
Beef tartare • Lamb kebabs with cumin and coriander • Saint-Nectaire cheese.
Liquid geography
As you may know, there are many Thienponts in Bordeaux, but they all come from the same family, which started in the wine trade in 1842 with the grandfather Camille. Today, his descendants are called Nicolas (Pavie-Macquin, Puyguéraud, La Prade), Alexandre (Vieux Château Certain), Jacques (Le Pin) and François Thienpont. The latter is at the head of Wings, which is a reference in the Bordeaux wine trade. The wines he signs under his name express their terroir and their vintage with the greatest sincerity.
